In apocrypha (and some canon), everybody from Voyager got to basically pick and choose their career after they got home, whether they stayed in Starfleet or not. I mean that only did they pull off the impossible, but now they’re also famous. So that was inevitable.
The quote is from the scene where she and chekotay discuss possibility of being stranded in the 90s in future ends. So they wouldn’t have the advantage of being famous, quite the opposite.
